Mix and Match Grain Bowl Recipe
Ingredients:
1 cup dry millet, quinoa or brown rice, cooked
Raw vegetables, chopped or grated (Whatever you have – carrots, celery, snow peas, onion, bell peppers and daikon radish are just a few of many options.) *You can also throw on leftover cooked vegetables like zuchinni, squash, green beans or corn.
Raw greens, chopped (Romaine lettuce, arugula, dandelion, baby kales – any mixed raw greens.)
Fresh herbs, chopped (Again, whatever you have on hand – try parsley, chives, basil or mint.)
Protien – Anything goes! (Leftover chicken, fish or beef, a handful of nuts, a scoop of leftover beans, or sauté some tofu.)
Sea vegetables, ground (sprinkle on to boost the mineral content.)
Sauces (Our favorites are soy sauce and ume plum vinegar, but use what you love – olive oil and lemon juice with a sprinkle of salt, a dash of you favorite salad dressing, or barbeque sauce. *Do your best to find sauces made without sugar or a bunch of other ingredients that are unknown or hard to pronounce.
Instructions:
Cook grain.
While grain is cooking chop vegetables and arrange nicely on a platter.
Place a scoop of grain in each bowl.
Allow everyone to top their own grains.
One dry cup of grains serves about 4.
